Inspired by Jenke’s insights from our recent Mother's Day interview and her suggestions for our Mother’s Day Gift Guide, this granola blends flavor, simplicity, and heart … everything your mom deserves.

Jenke and her family try to keep their special occasion breakfasts easy and enjoyable for everyone. “We usually make a special brunch—a few of our go-tos are quiche, crepes, or croissant French toast. Build your own yogurt parfaits with all the toppings (Greek or plain yogurt, fresh and dried fruits, nuts, jam, nut butter, and granola) are always a hit, and everyone can make their own exactly how they like it!”, she said. Here is her recipe for an easy-breezy Mother’s Day Vanilla Pecan Granola.

Ingredients

3 C. Old Fashioned Oats
1 C. Pecans
1/2 tsp. Cinnamon
1/4 tsp. Sea Salt
1/2 C. Melted Coconut Oil
1/2 C. Pure Maple Syrup
2 tsp. Vanilla bean paste
1 Tbsp. Chia Seeds
1 Tbsp. Ground Flaxseed
1/4 C. Dried Blueberries
1/2 C. Dried Apricots (chopped)
1-2 Tbsp. Raw Honey 

Directions

In a large bowl combine: oats, pecans, cinnamon, salt, vanilla bean paste, maple syrup and melted coconut oil. Stir to combine and pour onto a parchment-lined sheet pan.

Bake at 300 degrees for 22 minutes.

Rotate the pan halfway during baking. Remove from the oven and sprinkle with dried fruit, chia seeds, and ground flaxseed. Stir to combine.

Drizzle with honey and let the granola cool for at least 15 minutes. Serve with your choice of yogurt, add your favorite toppings, and enjoy!
