Chai Crumb Cake with Pecan Crumble & Cardamom Glaze

This Chai Crumb Cake has all the warm, cozy flavors and reminds you why autumn is such a special time of year. Gather your spices, stock your pantry and fridge and get ready to cook and bake with this seasoning’s offerings. 

The recipe consists of 4 parts including a chai spiced cake, a cinnamon butter center, a pecan crumble and a vanilla chai glaze. Perfect for pairing with your morning coffee, as an afternoon treat, or for dessert with a scoop of vanilla ice cream.

Ingredients:

Brown Sugar Pecan Crumble:

1/2 cup brown sugar

3/4 cup all-purpose flour

1/2 cup old-fashioned oats

1/4 tsp. Himalayan salt

1/2 cup pecans (lightly chopped)

1/3 cup melted butter (5 tbsp.)


Cinnamon Filling:

1/3 cup brown sugar

1 tbsp. unbleached all-purpose flour

3/4 tsp. cinnamon

2 tbsp. room temperature butter


Chai Spiced Cake:

1/2 cup canola oil

1 cup cane sugar

1 cup unsweetened applesauce

1 tsp. vanilla bean paste

1/3 cup strong brewed chai tea

2 large eggs

1 3/4 cup unbleached all-purpose flour

1/4 tsp. baking powder

1/2 tsp. baking soda

3/4 tsp. Himalayan salt

1/4 tsp. cinnamon

1/4 tsp. ground ginger

1/8 tsp. nutmeg

1/8 tsp. ground clove


Chai Glaze:

1 cup powdered sugar

1/4 cup chai tea

1/4 tsp. vanilla bean paste

1/8 tsp. cardamom

A pinch of Himalayan salt

*Garnish with crushed peppercorn medley

Instructions:

  1. Preheat oven to 350°F and move rack to the center of the oven. Prepare a 9’’ or 10’’ springform pan by spraying with pan release spray. Trace the pan with the parchment paper, cut out and line the bottom. Lightly spray over the parchment paper and set aside.
  2. Make the Pecan Crumble topping. Combine the dry ingredients, pour the melted butter over top and mix with a fork to create a crumbly texture. Set aside until ready to use. 
    *When ready, sprinkle the cake batter with the crumble.
  3. In a small bowl, make the cinnamon butter filling and set aside.
  4. Make the cake batter. With a stand mixer or whisk, mix the wet ingredients until smooth and lighter in color (2-3 minutes). Slowly fold in the dry ingredients into the egg mixture.
  5. Pour the batter into your prepared pan and set aside. Bake at 350°F for 40-50 minutes (test the center with a pairing knife until it comes out clean).
  6. While the cake is baking, prepare the Vanilla Chai Glaze. Whisk the powdered sugar a few times to make sure there are no lumps. You want it to feel very light as you add the chai tea & vanilla. Whisk until smooth. Cover & set aside.
  7. Once the cake has cooled, remove from pan and drizzle with the Chai Glaze. Garnish with a sprinkle of crackled pepper medley (the little flecks of green and pink create a beautiful accent).
  8. Carefully, place the cake on the serving platter. This Countertop Pedestal Tray works beautifully! Lastly, enjoy with those you love.
